How safe and effective are home made cleaning products. My friend uses vinegar and water to clean counters and floors.

Vinegar is a natural disinfectant and deodorizer and the perfect all-purpose cleaner. Cleaning your kitchen with vinegar and other edible ingredients like lemon and baking soda is safer (and cheaper) than using harsh chemicals. Vinegar is acidic, so it shouldn’t be used on marble and it should be diluted. The smell vanishes as it dries but adding some lemon juice to the mix makes it smell better. For general cleaning, I usually use one part vinegar to two parts water with a splash of lemon juice. Lemon juice is a effective natural disinfectant, especially when left on surfaces. Baking soda is safe abrasive scrub for sinks and bathtubs that deodorizes too.
