Bok choy is a  type of cabbage from the Chinensis family, and has leafy blades like celery and thick, translucent white stalks, which are entirely edible. It is native to China, and is often seen in Asian cuisine.

Bok choy is very high in Vitamins A and C, and is also quite rich in folate and calcium. One cup of shredded bok choy contains just ten calories and is fat- and cholesterol free!

Shopping and Storage

When shopping for bok choy, look for bright, fresh green leaves with no visible browning or wilting. To store, keep in an airtight plastic bag in the refrigerator for up to one week.

Preparation

Bok choy can be cooked into soups, sautéed, stir fried, steamed, or even eaten raw.
