Strawberries are an incredible source of vitamin C and an awesome source of manganese and fiber. They are also a good source of iodine, potassium, folate, and vitamins B2, B5, K, and B6.

Shopping and Storage

Strawberries, like most berries, are extremely perishable, and therefore should be purchased only a few days before use. Look for strawberries that are firm, deep red, have attached greens, and are free of mold. Avoid dull looking or yellowing strawberries.

Refrigerate strawberries as soon as possible in a dry container and they will keep for several days. Don't wash them until just before they are eaten, and don't remove their caps or stems until after they're washed.

Preparation

Strawberries are wonderful as a snack or in fruit salad or a vegetable salad. They are also great with yogurt, parfaits, or in shakes.
